MICROWAVE POPCORN

Ingredients
  • ¼ Cup popcorn kernels
Instructions
  1. Place the kernels in a microwaveable container with a lid or a Pyrex jug with a plate over the top.
  2. Microwave on high for 3 minutes.
  3. When the popping slows down, remove from microwave.
  4. Store in an airtight container.

I’m so excited to have filmed my first What I Eat In A Day video for you all!

It was a long day of cooking because normally I have my snacks prepared beforehand ready to go for the week but I was so happy filming for you and an unexpected bonus, Andrew took the boys out for brunch and played with them outside for most of the day. You will notice them poking their hands in and traces of them playing in the background but I wouldn’t have it any other way. After all, they are a part of my day too ♥

I’ve introduced 4, yes four! new recipes for you in my what I eat in a day vid now that I’m back into my groove after our move into our new home.

**TIP** Prepare your snacks from the Sunday so you are planning for success for the week. This is the best way to stay on track with your healthy lifestyle.

CHOCOLATE AVOCADO PUDDING

Make your Chocolate Avocado Pudding ahead of time and enjoy throughout the week as a well balanced snack!

WHAT I EAT IN A DAY #1 – HOW TO MAKE CHOCOLATE AVOCADO PUDDING

CHOCOLATE AVOCADO PUDDING

Ingredients
  • 1 (130 g) Hass Avocado, pitted
  • 15 g chia seeds
  • 20 g cacao
  • 4 medjool dates, pitted, soaked in boiling water for 10 minutes
  • 60 g fresh or frozen raspberries
Instructions
  1. Discard water from dates and place all ingredients, except raspberries, in a high speed blender or food processor.
  2. Mix on high until everything is incorporated.
  3. Portion equal amounts into three serving cups and top with raspberries.
  4. Refrigerate for minimum 1 hour before serving.

SATAY TOFU TACOS

With a hint of spice and deliciously creamy peanut satay, these Satay Tofu Tacos will be sure to please!

If you haven’t tried tofu before, this is a good point to start at. Tofu is very versatile and adapts well in many dishes. It takes on any flavours it is cooked in and my Satay Tofu Tacos are one great example. They were mistaken for chicken! But what’s better is that tofu is naturally cholesterol free and completely plant based making this a perfect choice for Meatless Monday or any day of the week!

WHAT I EAT IN A DAY #1 – HOW TO MAKE SATAY TOFU TACOS

SATAY TOFU TACOS

Ingredients
  • 600 g firm tofu, diced into bite sized cubes
  • 1 red capsicum, chopped
  • 70 g peanut butter
  • 1 Tablespoon tamari
  • 2 Tablespoons sweet chilli sauce
  • 1 Tablespoon water
  • 1 pack (8) wholegrain Taco boats
  • Mixed greens
  • Chopped fresh coriander
Instructions
  1. Place the tofu and capsicum in a skillet on medium heat and cook, stirring occasionally until tofu is slightly browned.
  2. Meanwhile, mix together the peanut butter, tamari, sweet chilli sauce and water until well combined.
  3. Once the tofu is browned, pour over satay sauce and mix to coat evenly.
  4. Portion mixed greens into taco boats and spoon equal amounts of the satay tofu into the boats.
  5. Top with fresh coriander and serve.

CHOCOLATE CARAMEL SMOOTHIE

CHOCOLATE CARAMEL SMOOTHIE

Ingredients
  • 30 g (1 scoop) Vanilla soy protein isolate
  • 3 medjool dates
  • 125 ml soy milk
  • 125 ml water
  • 20 g chia seeds
  • Ice
  • 1 Tablespoon cacao
Instructions
  1. Add all ingredients except cacao into blender and blend on high speed until well mixed.
  2. Pour half into a glass.
  3. Add cacao to remaining smoothie mix and blend on high speed until mixed through.
  4. Pour on top of caramel smoothie mix and enjoy.
